I had come into this weekend thinking that I would spend my Sunday morning going for a hike with my boyfriend, but instead we ended up laying in bed till 11 a.m … oops. The stress of the past week had finally caught up with both of us – my boyfriend was studying all week for a big exam that he had to write on Saturday morning, and I’ve found myself stressed 24/7 lately as graduation is nearing, which means a ton of final assignments plus the added pressure of trying to find a job or an internship. So by the time Sunday morning rolled around, we were both so exhausted that we decided to post-pone the hike till next weekend (Maybe …).
Once we finally got ourselves up and moving, we decided we wanted to make something quick and easy for breakfast. So, we decided on breakfast wraps. These wraps are so easy to make and are packed with protein so you are left feeling very full afterwards. All you need are some scrambled eggs, veggies of your choice, cheese and bacon. That being said, the eggs are the star of this wrap – so here is a video on how to make perfect scrambled eggs.
So, anyone who knows me, knows that I love me some coffee. I’m that person who needs a cup of coffee before they leave the house in order to function, and typically another cup once I’m at school/work. Starbucks has always been my go-to when it comes to buying a cup of coffee, and sometimes Second Cup if there is one near by. However, once I moved to Milton I discovered a place called Coffee Culture, which has great coffee. I thought this place was unique to Milton, but it turns out I’m just oblivious as there are actually quite a few of them in other cities.
I told my Mom about Coffee Culture and it’s safe to say she has become obsessed. Her and my step dad have weekly breakfast dates there on the weekend (so cute, right?) and are always trying new things on the menu. A few weeks ago, she was telling me that she tried one of their sandwiches and that it was one of the best sandwiches she had ever eaten. It’s called the Smoked Turkey Bocata, and it’s so good that we decided to try and recreate it at home! And we were very successful.
In addition to going for a hike yesterday, what else did I do? Yup, that’s right, you guessed it – I baked. Now for once I can honestly say it wasn’t because I was craving something myself, but my mom had told me earlier this week that she really wanted some homemade cookies, so I told her I would make some. Chocolate chip cookies were the first thing I ever baked when I was younger, and I have been making them for as long as I can remember. But I’ve always used other peoples recipes, and although they always turned out great, something made me want to try and create my own recipe this week. So I did! The recipe could use some tweaking to perfect it, but in my opinion (and my moms) they turned out pretty well.

This past weekend, my boyfriend and I attempted to make homemade sushi and I am happy to say it turned out great. I will be the first to admit that I am absolutely addicted to sushi, and I’m not even a little bit ashamed. I remember a few years ago it seemed like everyone I knew all of a sudden loved sushi and was always going out to enjoy some, but I never went because I was convinced that sushi was not something I could ever enjoy. At this point, I had only eaten in once in my life and that was when we had to make it ourselves in my food and nutrition class in grade 12. Let’s just say I wasn’t impressed, but looking back now I’m thinking that probably had something to do with the fact that none of us had any idea what we were doing making it.
I’m back with another recipe and surprise, surprise … it’s another dessert. Valentine’s Day is all about love and being sweet, and what better way to be sweet than with chocolate right? So, I’m taking advantage of this holiday and making another treat for the second time in a week – Chocolate Bark! I also think this is completely justified seeing as my boyfriend finished all of the Peanut Butter Balls I made earlier this week within two days. Yes, I said all of them. I think this recipe is even easier than the peanut butter balls, if you can believe it. There’s only four ingredients, and the most time consuming part about this recipe is waiting for the oven to preheat.
With Valentine’s Day approaching, I was trying to think of something small, yet thoughtful, to give to my boyfriend. Since I’m currently living life on that student budget, we agreed not to get each other any gifts and just spend the day together. But, I still wanted to do a little something, so I decided I would make him one of his favourite treats – peanut butter balls! I didn’t even know these were a thing until we had started dating, but now they are one of my favourite things to make as they are so easy. There’s no baking required, and only five ingredients!
It’s finally Friday! And having Friday’s off from school means that my weekend starts early, and I could not be happier. Juggling eight courses at school makes for a very busy and stressful week, so I plan to take full advantage of the weekend and treat myself with a little relaxation.
Another thing I decided to treat myself with … my favourite smoothie ever for lunch. I lived on residence for my first year when I went to the University of Guelph, and took full advantage of all the great food options that were on campus. One of my favourite things to buy was a peanut butter and banana protein smoothie from the cafe right by my residence building – my roommate and I were absolutely obsessed with them.
